Top Dishes to make at your Vegan Thanksgiving!

Hey friends, Happy Early Thanksgiving!

I have been getting quite a bit of requests for my top go-to recipes to bring to Thanksgiving!  I try my hardest to make things on time, but let’s face it: Thanksgiving means vacation and that means nothing is done on time. So I’m sharing my favorite quick, last -minute, simple and delicious recipes.

This is a recent blog, as you most know, so I don’t have too many recipes up for this holiday, but there are my faves so far!

I definitely know what it is like to be that one lonely vegan at a dinner where everything at the table has some meat or dairy product. Like, no mom I’m not going to ONLY eat dinner rolls (eats 6 dinner rolls). Well, those days are over!

Entirely plant- based sides, entrees and dessert! You cannot go wrong!

Thankfully my family are very respectful of my diet and vegan lifestyle (plus they love for me to cook). However, for so many people it can be a real struggle to eat confidently at someone else’s dinner. Never knowing if there is butter on the veggies or turkey in the stuffing. It sounds crazy, but that can really ruin someone’s meal.

If you feel totally at a loss of what to have at a dinner that’s vegan or you just want a healthy alternative: try one (or all) of the recipes below! I promise they will not disappoint!

The only disappointment will be once it is all gone and people still want more.

I’ve compiled a list of my sure-to-be hits below. Guaranteed to wow everyone at any dinner, whether you’re guests, family or friends are vegan or not. Best part, you’ll never have to worry about what’s in it!

1. Best Damn Cauliflower Thanksgiving Stuffing!

{You cannot have Thanksgiving without stuffing. Instead of the traditional, carb overload – this cauliflower stuffing is beyond perfect. 4. Black-Eyed Pea and Dirty Rice stuffed Winter Squash!

{If I had to pick one thing that I could make to serve many people and fill them up, as a main course, it would definitely be: stuffed squash. You can make as many as you need for the number of guests, everyone gets a personal serving and the filling possibilities are endless! The perfect balance of sweet and savory!}

6. Cinnamon Pumpkin Cupcakes with Spiced Vanilla Frosting!

{One dish I am constantly looking forward to at Thanksgiving: Sweet Potatoes. This dessert is a sweet potato casserole, without the casserole. Amazingly sweet, perfectly spiced and so quick to make! }

{These dreamy cupcakes are so freaking amazing you will NEVER know they are dairy-free and egg-free. So easy to make and wonderful to eat. You can even make them gluten-free by swapping out the flour for a gluten-free kind if you so choose!}

7.  3 Ingredient Cinnamon Chocolate Chunk Cookies! 

{Do you have bananas? Do you have oats or oatmeal? Do you have chocolate (vegan)? If you answered yes to these three questions then you have everything you need. I even added in a little peanut butter for extra protein, but that is completely at your discretion. You can even eat them for breakfast if you so choose!}
